The roast is slightly darker, with a sweet and full-bodied flavour and notes of chocolate, tropical fruits, red berries and a hint of citrus. Brazil is the world's largest coffee producer – and it shows in the style. The coffee is often smooth, round and reassuring. Think chocolate, nuts, caramel and mild sweetness. The body is often full-bodied but without sharp acidity. It is the base that makes the coffee smooth and easy to like, and often serves as the "foundation" in many blends.
Coffee from El Salvador is often balanced and elegant, with a smooth acidity and distinct but subtle fruit tones. It is not as strong as Brazilian coffee but not as acidic as Ethiopian – it lies somewhere in between, in a very harmonious way.
Peru is known for its pure, organic high-altitude coffees. The flavour is often clear, smooth and fresh with a certain floral and light fruitiness. The acidity can be lively but not sharp. The body is often medium-full.
Uganda is more intense and deeper in tone. Here you get strength, sweetness and dark fruit. The body is often robust, sometimes almost vinous or plum-like. Uganda contributes depth and warmth to a blend.
