Colombia Decaf (decaffeinated coffee) is just one such example. The coffee comes directly from 11 small farmers to the Johan & Nyström roastery, from Pitalito and Oporapa, a renowned coffee region. The beans are harvested and processed using the washing method, also known as the solvent method.
The method used to remove caffeine from the coffee is based solely on a combination of crystal-clear mountain water and an ester called ethyl acetate, which is extracted naturally from cane sugar molasses. Ethyl acetate is also common in many fresh fruits and vegetables.
Without exposing the coffee beans to unnecessarily high pressure or high temperatures, sophisticated steam technology makes it possible to extract only the caffeine from the coffee. This preserves the bean's natural cell structure as well as its flavour and aroma.
The coffee has a nice fresh sweetness, medium body and a completely clean and very enjoyable aftertaste. It is certainly one of the best decaffeinated coffees you will ever drink.
